Spanish tortilla

Spanish tortilla (tortilla española) called as well potato tortilla (tortilla de patatas), is a variation of an omlette with eggs and fried potatoes, to which sometimes onion is added. A typical one is prepared for several people and such a tortilla contains about 10 eggs and nearly 1 kg of potatoes, hence its dimensions, radius and thickness, are a little different than in the case of tortilla made by me. Regardless of the size, the taste remains the same:).


Ingredients (serves 1):

2 eggs
1 small onion
3 small potatoes
oil for frying
salt

Method:

Cut the potatoes and onions finely. Heat the oil in a frying pan and toss the potatoes. When softened and slightly browned, add the onion and fry until the onion is transparent. In the meantime, in a bowl, beat the eggs using a fork. Remove the pan from the heat and strain the potatoes and onions through a sieve. 

Next, combine drained potatoes and onions with eggs. Heat 1 tablespoon of oil in a skillet and swirl around. Pour the mixture into it and cook over low heat, shaking the pan occasionally until the underside is set and browned. Invert the tortilla onto the plate, then gently slide it back into the same skillet, cooked side up. Fry for a few more minutes. Serve cut into wedges.
